Your measurements imply that a dial indicator was used. I just use a 
feeler gauge and try to get the clearances within 0.001 inches.
I don't know where you can order single shims now that there are no more 
Alfa Romeo dealers. After measuring the clearances, as you did, I remove 
the cams, measure the shims, and swap shims among the valves to satisfy 
as many as possible. As the valves usually pound themselves into the 
head reducing clearances, with this procedure I'll end up with one or 
more shims which are too thick. These I grind down on an emory stone by 
hand untill they are just right. Alternatively, you could just buy these 
few if you can a seller.
